Low Calorie Chocolate Brownies

I have to share this recipe, because it is amazing! The best brownies I have ever tasted, and only 91 cals per piece. The secret ingredient here is extra-light mayonnaise. (Tell people about it and they won't touch, more for you!)

Ingredients 
  • 85g of your favourite chocolate
  • 85g plain flour
  • 25g cocoa powder
  • 1/4tsp bicarb soda
  • 100g caster sugar
  • 50g light brown sugar
  • 1/2tsp coffee granules
  • 1tsp vanilla etract
  • 2tbsp 0% fat vanilla yoghurt
  • 1 egg
  • 1tbsp warm water 
  • 100g extra-light mayo


Prep
  • Preheat oven to 180c or 160c if you have a fan oven
  • Grease & line a 19cm square tin
  • Mix the flour, bicarb soda, and cocoa powder in one bowl
  • Mix caster sugar & brown sugar in bowl no.2
  • Mix coffee, vanilla, & yoghurt in bowl no.3


Recipe
  • Melt the chocolate (in the microwave is easiest)
  • Stir the sugars into the chocolate
  • Add the coffee/vanilla/yoghurt mix
  • Stir in 1tbsp of warm water
  • Beat in a whole egg, make sure it's well mixed
  • Stir in the mayonnaise
  • Gently fold in the flour/bicarb/cocoa mix, being careful not to overstir 
  • Pour into your lined tin, and smooth out evenly
  • For those of you who aren't watching your waistline, here comes the fun part - you can add chocolate chunks, walnuts, sweets, anything you like. Just push them gently into the top of the mix, dotted around.
  • Put in the oven for approx 20-25 minutes.
  
  • To check when they're done, stick a cold knife into the middle, if it comes out with a few sticky crumbs it's done, if you like them more gooey then take them out when there's lots of sticky crumbs.
  • Let them cool down on a cold surface, they will get slightly dryer as they get cool so don't panic if you think you've taken them out too early.
  •  Slice them into 12 slices, and eat!
